Here’s a wonderful recipe for the rhubarb growing at this time of year. It’s easy to make and so delicious, it’s sure to be a hit at the season’s bbq’s and potlucks.

Ann’s Rhubarb Squares

  • 2 1/2 CupsFlour
  • 1 CupButter
  • 2 1/6 CupSugar
  • 3 CupsDiced rhubarb
  • 1 1/2 CupsShredded coconut
  1. Preheat oven to 350F
  2. Mix together 2 cups flour, butter and 2/3 Cup sugar until crumbly
  3. Press into 9x13 pan and bake for 10 minutes
  4. Whisk together eggs, salt, 1 1/2 Cups sugar, 1/2 cup flour, Vanilla
  5. Add rhubarb and coconut
  6. Spread over first mixture and bake another 25 minutes at 350 F or until brown and crisps up
