Here’s a wonderful recipe for the rhubarb growing at this time of year. It’s easy to make and so delicious, it’s sure to be a hit at the season’s bbq’s and potlucks.

Ann’s Rhubarb Squares
- 2 1/2 CupsFlour
- 1 CupButter
- 2 1/6 CupSugar
- 3 CupsDiced rhubarb
- 1 1/2 CupsShredded coconut
- Preheat oven to 350F
- Mix together 2 cups flour, butter and 2/3 Cup sugar until crumbly
- Press into 9x13 pan and bake for 10 minutes
- Whisk together eggs, salt, 1 1/2 Cups sugar, 1/2 cup flour, Vanilla
- Add rhubarb and coconut
- Spread over first mixture and bake another 25 minutes at 350 F or until brown and crisps up
