This is a delicious way to serve zucchini. I like to serve it with frittata (with chopped zucchini) and sprinkle it with the same parmesan-herb mixture. Great ways to use up a bountiful harvest of zucchini.
Parmesan Herb Zucchini
- 4zucchini, quartered lengthwise
- 1/2 Cfreshly grated parmesan
- 1/2 tspdried thyme
- 1/2 tspdried oregano
- 1/2 tspdried basil
- 1/4 tspgarlic powder
- to tastekosher salt and ground black pepper
- 2 Tbspolive oil
- 2 Tbspchopped fresh parsley
- Preheat oven to 350 degrees F. Coat a cooling rack with non-stick spray and place on a baking sheet; set aside
- In a small bowl,, combine parmesan, thyme, oregano, basil, garlic powder, salt and pepper, to taste
- Place zucchini onto prepared baking sheet. Drizzle with olive oil and sprinkle with parmesan-herb mixture. Place into oven and bake until tender, about 15 minutes. Then broil for 2-3 minutes, or until crisp and golden brown
- Serve immediately, garnished with parsley, if desired
