This is a delicious way to serve zucchini. I like to serve it with frittata (with chopped zucchini) and sprinkle it with the same parmesan-herb mixture. Great ways to use up a bountiful harvest of zucchini.

Parmesan Herb Zucchini

  • 4zucchini, quartered lengthwise
  • 1/2 Cfreshly grated parmesan
  • 1/2 tspdried thyme
  • 1/2 tspdried oregano
  • 1/2 tspdried basil
  • 1/4 tspgarlic powder
  • to tastekosher salt and ground black pepper
  • 2 Tbspolive oil
  • 2 Tbspchopped fresh parsley
  1. Preheat oven to 350 degrees F. Coat a cooling rack with non-stick spray and place on a baking sheet; set aside
  2. In a small bowl,, combine parmesan, thyme, oregano, basil, garlic powder, salt and pepper, to taste
  3. Place zucchini onto prepared baking sheet. Drizzle with olive oil and sprinkle with parmesan-herb mixture. Place into oven and bake until tender, about 15 minutes. Then broil for 2-3 minutes, or until crisp and golden brown
  4. Serve immediately, garnished with parsley, if desired
